CARBONDALE, Ill. — Touch of Nature Outdoor Education Center’s annual Buffalo Tro, set for Nov. 21, is both a cherished tradition and an evening filled with good food, sharing stories around the campfire and fun.

Lloyd B. Sharp, an outdoor education pioneer who was a longtime SIU professor, brought the history-steeped event to Touch of Nature nearly three-quarters of a century ago, and countless people have since enjoyed the tradition for which steaks are cooked carefully in a fire pit filled with a 6-to-8-inch deep bed of oak, hickory or maple wood coals, then “clinked” to remove the ashes. It’s a process that cauterizes the meat pores in the intense heat, keeping the juices and flavor in.

The steaks are served with a baked potato, salad, rolls and dessert. A vegetarian option is available as well.

Although it is a unique and tasty time, the event is more than just a meal, organizers say. There’s also storytelling around the fire, fostering a sense of community and connecting participants to the extraordinary heritage of Touch of Nature. And there will be special entertainment as well.

“The Buffalo Tro is such an important part of our history at Touch of Nature and Southern Illinois University,” said Brian Croft, Touch of Nature director. “For more than 70 years, this event has brought people together in a way that reflects the best of who we are — community, connection and celebration. This event not only marks the close of our year, but it also gives us the chance to reflect on all that we’ve accomplished and look forward to what’s ahead. The Buffalo Tro is truly one of those special SIU traditions that continues to bring our community together year after year."
